Dinner Tonight: Super Sandwich

If you’re anything like me, finding simple solutions for dinner is absolutely imperative. But the health nut in me just can’t do Hamburger Helper or boxed mac & cheese … not that there’s anything wrong with these, and don’t get me wrong, I’m sure they’re tasty. But I do make a concerted effort to get good foods into my family’s systems. So when I saw a recipe for a similar sandwich, I was sold.

Here’s what you’ll need:

  • “Good” bread.  We get ours from The Bread Basket and I swear it can make or break a sandwich. TOTALLY worth it.
  • Avocados (got ours from Trader Joe’s)
  • Cheese (sliced – I chose Munster)
  • Pepperoni. I used Boar’s Head turkey pepperoni. Remember the health nut reference above?

So; get out a skillet/non-stick pan/whatever you want to call it and put a little spray in it. Or if you want this to be really yummy, put a little bit of butter in the pan/on the bread. Assemble your sandwich; sliced avocado, pepperoni and top it off with cheese and another piece of bread. Cook it like you would a regular grilled cheese.

The result is amazing. My kids all gave it “two thumbs up” – hard to come by around here. And (ahem) they were eating avocados. Score!

For evenings when you have little time but want something tasty, I highly recommend this.  Enjoy!

Its like you learn my thoughts! You seem to understand so much approximately this, such as you wrote the ebook in it or something. I think that you just can do with a few % to force the message home a little bit, however other than that, this is wonderful blog. An excellent read. I will definitely be back.

Wow, super simple! I’m going to try it. My kids love the boars head pepperoni. What’s an alternative to the “good” bread though? I don’t think there’s a “Bread Basket” on my side of town. Looks like it’s some sort of white bread?

Super simple is right … now, as for bread. The Bread Basket is on Monroe Rd. near Charlotte Swim Academy. I think you work Uptown, right? Are you ever in that area? If not, try the white bread at Great Harvest. It’s not the healthiest for you, but it is good and homemade. You can also do their honey wheat if you want to go the healthy route. Hope you enjoy it!!
